Blueberry Flummery Recipe
Ingredients
3 1/2 cups fresh or unsweetened frozen wild blueberries (1 pound)
3/4 cup water, divided
3/4 cup honey
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
3 tablespoons cornstarch
Directions
Place blueberries into a medium-size saucepan.
Add 1/2 cup water, and cook over medium heat, while stirring, until berries yield their juice, about 5 minutes.
Add honey, lemon juice, and cinnamon.
Simmer 2 minutes longer. (At this point, berries can be pureed in a blender, if desired.
It's best to do this in 2 batches, since hot mixtures splatter.
Return berry puree to saucepan. Combine 1/4 cup water with cornstarch in a cup.
Stir until cornstarch is dissolved.
Add to blueberries, and cook, while stirring, until mixture bubbles and thickens.
Simmer over low heat for 2 minutes.
Spoon into dessert dishes.
