Blueberry Filling Recipe
Ingredients
| Butter | 1/2 Cup (16 tbs) | |
| Confectioner’s sugar | 1 1/2 Cup (16 tbs) | |
| Egg yolks | 4 | |
| Brandy | 2 Tablespoon | |
| Blueberries | 5 Cup (16 tbs) | |
| 1 cup heavy cream, whipped and sweetened | ||
Directions
Cream butter; gradually beat in sugar.
Add egg yolks, one at a time, beating well after each addition.
Add brandy.
Carefully spread over crumbs.
Refrigerate overnight.
Pour blueberries into a sieve over a bowl and let drain for several hours.
Just before serving, spread over butter mixture.
Top with sweetened whipped cream.
