Blueberry Coulis Recipe

Ingredients
2 tbsp (30 ml) cornstarch
1/2 cup (125 ml) water
1/4 cup (60 ml) sugar
2 cups (500 ml) blueberries
Directions
– Blend cornstarch with a little water and set aside.
– In a saucepan, boil the water, sugar and blueberries for about 5 minutes.
– Add the cornstarch and boil for 1 minute.
– Run through the blender, then a sieve, to get a smoother coulis.

Blueberry Coulis: An uncomplicated and easy recipe. I adjusted the cornstarch to about a quarter of the amount required. Delicious with the following recipe: 1 cup fruit juice: bring to the boil. Add 1 packet lemon jelly, stir until dissolved. Add 1 cup flavoured yoghurt, mix well and leave to set.
