Blue Ribbon Coffee Cake Recipe
I grew up eating this blue ribbon coffee cake frequently and am happy to share this recipe with you. It is always prepared with a focus on fruits. I will prepare this blue ribbon coffee cake as snack for a get-together I am soon going to host. Ingredients
1 cup sugar
1/4 cup melted butter
1 egg, beaten
1/4 tsp. salt
1 1/2C flour
2 tsp. baking powder
1/2 cup milk
2 Tbsp. brown sugar
1 tsp. cinnamon Blackberries (may substitute blueberries, peaches, etc.)
Slivered Brazil nuts (may substitute almonds, walnuts, etc.)
Directions
Mix sugar, melted butter and egg.
Add salt, flour, baking powder, and milk.
Mix well.
Pat dough into greased 8 or 9 inch pan.
Cover with blackberries.
Sprinkle with Brazil nuts.
Sprinkle with brown sugar and cinnamon mixture.
Bake at 375° for 20 minutes.
