Blue Ribbon Apple Cake Recipe
Ingredients
| All purpose flour | 3 Cup (16 tbs) | |
| Sugar | 1/4 Cup (16 tbs), divided | |
| Baking powder | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Eggs | 4 standard | |
| Vegetable oil | 1 Cup (16 tbs) | |
| Orange juice | 1/3 Cup (16 tbs) | |
| Vanilla extract | 1/2 Teaspoon | |
| Baking apples | 4 Medium, thinly sliced | |
| Ground cinnamon | 2 Teaspoon | |
| Confectioners' sugar | ||
Directions
In a mixing bowl, combine flour, 2 cups sugar, baking powder and salt.
Combine eggs, oil, orange juice and vanilla; add to the flour mixture and mix well.
In a bowl, toss apples with cinnamon and remaining sugar.
Spread a third of the batter into a greased 10-in.tube pan.
Top with half the apples.
Repeat layers.
Carefully spread remaining batter over apples.
Bake at 350° for 55-65 minutes or until a wooden pick inserted near the center comes out clean.
Cool in pan 15 minutes before removing to a wire rack; cool.
Dust with confectioners' sugar.
