Blue Corn Bread Recipe

Don't be mean to your self by missing out on this Blue Corn Bread recipe. It is most popularly enjoyed as a Side Dish. You don't have to be an expert to judge how delicious and flavorful this dish is.

Ingredients

 
1 1/2 cups blue cornmeal
 
1/4 teaspoon salt
 
1 tablespoon baking powder
 
1 medium onion, chopped
 
2 eggs, beaten
 
1 cup dairy sour cream
 
1/2 cup butter or margarine, melted
 
1 to 2 cups grated Cheddar cheese
 
1/4 cup chopped canned green chilies

Directions

Combine commeal, salt, baking powder and onion in a medium mixing bowl.
Make a well in center of cornmeal mixture.
Add eggs, sour cream, butter, cheese and chilies; mix well.
Pour into a greased 9 inch square pan.
Bake in a preheated 350°F oven 40 minutes, or until knife inserted in center comes out clean.

Made the blue corn flour bread - used cottage cheese instead of sour cream and red bell peppers instead of chilis - didn't have those on hand. It was still great.
