Blue Corn-Blueberry Muffins Recipe
Ingredients
1 cup (240 ml) Blue Cornmeal
1 cup (240 ml) Unbleached White Flour
2 tsp (10 ml) non-alum baking powder
1/2 tsp (3 ml) sea salt, optional
1 1/2 cups (355 ml) water
2-4 tsp (10-20 ml) honey
1/4 cup (60 ml) Unrefined Vegetable Oil
1 tsp (5 ml) vanilla
1 cup (240 ml) fresh or frozen blueberries
Directions
Stir dry ingredients together.
Combine liquid ingredients.
Mix liquid and dry ingredients and stir until just mixed.
Gently stir in blueberries.
Fill oiled muffin tins 2/3 full.
Bake in preheated oven at 400°F (205°C) for 20 minutes or until done.
