5 cups cubed, peeled, cooked potatoes
 
1 cup chopped celery
 
4 hard-cooked eggs, chopped
 
1/2 cup sliced green onion
 
1/4 cup chopped green pepper
 
1 cup dairy sour cream
 
1/3 cup evaporated milk
 
1 ounce blue cheese, crumbled
 
2 tablespoons vinegar
 
1/4 teaspoon dry mustard
 
1/8 teaspoon pepper

Directions

Sprinkle cooked potatoes with 1 teaspoon salt.
Combine potatoes, celery, eggs, onion, and green pepper.
Blend together remaining ingredients.
Pour over potato mixture; toss lightly.
Chill.
