Ingredients

 50 g/2 oz Danish blue cheese
 Cream1 Carton (1l), soured
 Pinch castor sugar
 Pinch dry mustard
 Onion1 Teaspoon, grated
 Oil1 Tablespoon
 Lemon juice2 Teaspoon
 1 tablespoon chopped parsley freshly ground pepper

Directions

1. Grate the Danish blue cheese. Place in a bowl with the soured cream.
2. Place the seasonings and onion in a bowl, blend in the oil and gradually beat in the lemon juice.
3. Blend this mixture into the soured cream and cheese.
4. Add pepper and parsley and serve with Cauliflower salad.
