Blue Cheese Egg Bake Recipe
Ingredients
7 tablespoons butter
6 tablespoons flour
1 teaspoon salt
3 cups milk
1/3 cup blue cheese, crumbled
1/2 cup celery, chopped
1/4 cup pimento, chopped
Salt and pepper to taste
12 hard-cooked eggs, quartered lengthwise
9 saltine crackers, finely-crushed
Directions
In a saucepan, melt 6 tablespoons butter over low heat, blend in flour and salt.
Add milk.
Cook and stir until mixture thickens and bubbles.
Stir in blue cheese, celery and pimento.
Add salt and pepper.
Place eggs in 12x7x2-inch baking dish.
Top with cream sauce.
Toss cracker crumbs with 1 tablespoon melted butter.
Sprinkle around edge of casserole.
Bake at 325° for 45-50 minutes or until bubbly and top is slightly browned.
