 Baby spinach - 1 sack (10 ounces)
 Blue cheese1/3 pound, crumbled
 Walnut halves1 Can (10oz)
 Maple syrup1/4 Cup (16 tbs), warmed
 Cider vinegar1 1/2 Tablespoon
 Extra-virgin olive oil - 1/4 cup
 Ground black pepper1 To taste
 Salt To Taste

Directions

MAKING
1. On a large platter and place spinach top with blue cheese and walnuts.
2. In a small saucepan warm maple syrup.
3. Into a small bowl pour vinegar.
4. Into vinegar whisk oil in a slow stream and whisk in maple syrup slowly.

SERVING
5. To serve, pour dressing over the salad and season with salt and pepper, to taste.
