BLT Potato Salad Recipe
Ingredients
| Red potatoes | 4 Small | |
| 1 /4 cup fat-free mayonnaise or salad dressing | ||
| Dijon Mustard | 1 Teaspoon | |
| 2 teaspoons chopped fresh or 1/2 teaspoon dried dill weed | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1 /8 Teaspoon | |
| Cherry or grape tomatoes | 1 /2 Cup (16 tbs), halved | |
| 1 1 /2 cups bite-size pieces romaine lettuce | ||
| 2 slices bacon, cooked, crumbled | ||
Directions
MAKING
1 In a 2-quart saucepan,place potatoes.Add enough water to cover and bring to a boil.Reduce heat to low,cover and cook for 10-15 minutes or until the potatoes are tender.Drain and cool for about 10 minutes.
2 In a medium bowl,mix ayonnaise,mustard,dill weed,salt and pepper.Stir in potatoes ,tomatoes and lettuce.
SERVING
3 Sprinkle bacon over the salad just befor serving.
