Blintzes Recipe
Ingredients
| Cottage cheese | 12 Ounce | |
| Egg yolk | 1 | |
| Butter | 1 Teaspoon, softened | |
| Vanilla | 1 Teaspoon | |
| 18 crepes, cooked only on 1 side | ||
| Butter | 2 Teaspoon | |
| Vegetable oil | 2 Teaspoon | |
| Sugar | 2 Tablespoon | |
| Cinnamon | 1 Tablespoon | |
| Dairy sour cream to pass | ||
Directions
Mix cheese, egg yolk, butter, and vanilla.
Divide filling between the crepes on cooked side and roll up.
Melt butter and oil in a large fry pan.
Place half of crepes in pan and fry until golden brown, turning once.
Repeat with rest of crepes.
Add more butter and oil if necessary.
Sprinkle each serving with sugar and cinnamon.
Pass sour cream.
