Blintzes Recipe
These Blintzes are thin pancakes with a nice cheesy filling. They are rich, filling and very tasty rounds. Just in case you are a weight watcher, then you can forget your resolution for sometime and enjoy the blintzes.

Ingredients
| Cake flour | 3/4 Cup (16 tbs), sifted | |
| Baking soda | 1/4 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Sugar | 2 Tablespoon | |
| Eggs | 3 Small | |
| Butter | 2 Tablespoon, melted | |
| Buttermilk | 1 1/2 Cup (16 tbs) | |

| Cherry preserves-to serve | ||
| Cottage cheese | 2 1/2 Cup (16 tbs), creamed (For Cheese Filling) | |
| Confectioner’s sugar | 3 Tablespoon (For Cheese Filling) | |
| Egg yolks | 3 (For Cheese Filling) | |
| Salt | 1/4 Teaspoon (For Cheese Filling) | |
| Vanilla | 3/4 Teaspoon (For Cheese Filling) | |
| Ground cinnamon | 3/4 Teaspoon (For Cheese Filling) | |
Directions
MAKING
1)In a bowl, sift together flour, soda, salt and sugar.
2)In a mixing bowl, beat eggs, butter and buttermilk.
3)Add the dry mixture and beat until very smooth.
4)Take a 7" skillet and lightly grease it and heat.
5)Pour in 3 tablespoons of the batter at a time, tipping the pan quickly to spread batter over bottom.
6)Fry each pancake slowly until lightly browned on one side only.
7)Remove from skillet and stack pancakes brown side up on flat plate until cool.
8)Take a bowl and mix all the ingredients thoroughly in it to make cheese filling.
9)Put about 1 1/2 tablespoons of the Cheese Filling in center of each pancake on the browned side.
10)Fold over the 4 edges to the middle and fry both sides in greased skillet until golden brown.
SERVING
11)Serve hot with sour cream and cherry preserves.
