Ingredients

 Dry or compressed yeast-1 package
 Lukewarm water1/4 Cup (16 tbs)
 Lukewarm milk-3/4 cup
 Buckwheat pancake mix-2 cups
 Baking soda1/2 Teaspoon
 Buttermilk2 Cup (16 tbs)
 Eggs4 Small, separated
 Butter3 Tablespoon, melted
 Salt1/4 Teaspoon
 Cottage cheese-to serve
 Salmon caviar-to serve

Directions

MAKING
1)In a mixing bowl, dissolve yeast in water.
2)In another bowl, add milk and 3/4 cup of the pancake mix and mix until smooth.
3)Cover with a towel and keep aside in a warm place to rise for 2 hours.
4)In a bowl, add soda to buttermilk.
5)Take a small bowl and beat egg yolks well.
6)Add melted butter, buttermilk and remaining pancake mix. Mix well.
7)Add to the raised mixture and mix well.
8)Add salt to egg whites and beat until stiff, but not dry, and fold into the batter.
9)Take a well-greased griddle and drop 2 tablespoons batter on it.
10)Cook until browned on both sides, turning only once.

SERVING
11)Serve Blini warm, topped with cottage cheese and salmon caviar.
