Ingredients

1/2 cup biscuit mix

3 eggs

2 cups milk

1/2 teaspoon salt Dash of cayenne pepper

1/2 teaspoon prepared mustard

6 to 8 slices bacon, cooked crisp and crumbled

3/4 to 1 cup shredded Cheddar cheese, or use part Swiss, part Cheddar

Directions

In blender container, put biscuit mix, eggs, milk, salt, pepper, and mustard. Blend on high speed (or "blend" button) for 2 minutes. Pour into greased pan or individual bakers. Sprinkle with bacon, then cheese. Press cheese down slightly. Bake in a 3745F oven for 30 to 40 minutes, or until custard is set (pie pan will take longer than individual bakers). Note: This is a standard blender quiche, lending itself to many variations. Instead of bacon, use about 1 cup cubed cooked ham, chicken, or turkey. Place meat in pie pan. Layer atop meat favorite ingredients, such as mushrooms, sliced green pepper, pimiento, or stuffed green olives. Pour egg mixture over all. Top with cheese.

This can be baked at 350F to 375F. Just check every 10 minutes for the browning on the top.
