Directions

Place Gruyere cheese in blender.
Cover and blend at high speed for 20 to 30 seconds.
Remove tiny cheese bits from blender.
Warm the wine (do not boil).
Put 2 cups of diced Swiss cheese in blender with flour, nutmeg, pepper, and garlic.
Cover and blend at high speed for 20 to 30 seconds, until cheese is in tiny pieces.
Keeping blender at low speed, gradually add warm wine.
Add remaining Swiss cheese.
Blend until smooth.
Pour cheese mixture into saucepan.
Add Gruyere cheese bits.
Stir over low heat until smooth and thickened, about 15 minutes.
Transfer to fondue pot and serve with French bread for dipping.
