Blanco Gazpacho Recipe
Ingredients
3 tomatoes, cut in chunks
1 large cucumber, peeled and cut into 2 in. (5 cm) chunks
3 tsp onion, chopped
1 slice whole wheat bread
2 cup water
1/2 cup chicken broth
2 tsp lemon juice
1 clove garlic
1 tsp salt
1/2 tsp black pepper
Directions
Combine all ingredients in food processor fitted with the steel blade.
Process on high speed, until mixture is smooth.
Chill.
Pour soup into bowls.
