Cuban Blackened Salmon Recipe Video

Directions

Bring water to a boil in large quart pot. Add green beans and cook for 3-minutes. Remove green beans from boiling water and add to ice cold water. Drain green beans in a colander and set aside to dry.

Cut Salmon into portion size and sprinkle with blackening spice on both sides.

Add 1/2 of olive oil to hot pan. Brown Salmon for 1-minute on both sides. Place browned Salmon in baking dish.

Bake 400*F for 15 minutes. (till internal temperature of fish is 145*F)

In the mean time add remainder of olive oil to hot pan and saute onions. Once onions are translucent, add green beans, tomatoes and salt & pepper to taste. Turn off heat and add balsamic vinegar to vegetable mixture.

Plate green beans and Salmon.
