Ingredients

 
9 grouper steaks, 5 ounces each
 
Lemon wedges (garnish)
 
COATING
 
1 medium yellow onion, cut in pieces
 
5 cloves garlic, peeled
 
1 tablespoon plus 1 1/2 teaspoons paprika
 
3/4 teaspoon ground dried thyme
 
3/4 teaspoon ground dried oregano
 
1/4 teaspoon ground cayenne pepper
 
1/4 teaspoon ground black pepper
 
1/4 teaspoon salt

Directions

1. Place all of the coating ingredients in a food processor or blender, and process until finely ground. Set aside.
2. Rinse the fish steaks and pat dry. Rub 2 teaspoons of the coating on each side of each steak. Set aside for 10 minutes.
3. Grill the steaks over medium heat, covered, for about 5 minutes on each side, or until the meat is easily flaked with a fork. Garnish with the lemon wedges.
