Directions

MAKING
1. Pat dry the fish fillets using a kitchen towel.
2. In a plate place the fish fillets and sprinkle with the blackening spice, salt and pepper all over the fish.
3. In a smoking hot grill pan or frying pan, melt the butter and cook the fish for 1 minute on one side, flip and cook the other side for 1 more minute.
4. Remove the fish and place on a plate, do not allow to over cook.

SERVING
5. Serve hot with a wedge of lime on side.
