Blackcurrant Fool Crunch Recipe

2 cups fresh or frozen blackcurrants
1 tablespoon water
1 tablespoon sugar
1 x 6 oz can Bird's English Dessert Mix
2 tablespoons butter
1 1/2 cups graham cracker crumbs
Whipped cream to decorate
Directions
Place the blackcurrants in a pan with the water and sugar.
Heat gently until the fruit is tender.
Cool, then rub the fruit through a sieve or puree in a blender or food processor.
Place the custard in a bowl and blend in the blackcurrant puree.
Melt the butter in a pan then stir in the biscuit (cracker) crumbs and mix well.
Place alternate layers of biscuit and blackcurrant mixture in glass serving dishes, finishing with the blackcurrants.
Pipe whipped cream on top if wished.
Serve chilled.
