Blackberry Pudding Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Cold water | 1/4 Cup (16 tbs) | |
| Boiling water | 1/4 Cup (16 tbs) | |
| 1 cup fresh or frozen blackberries or blueberries, no sugar added, divided | ||
| Buttermilk | 1/2 Cup (16 tbs) | |
| Artificial sweetener to equal 8 teaspoons sugar | ||
| Few drops lemon or vanilla extract | ||
Directions
In blender container sprinkle gelatin over cold water to soften.
Add boiling water and process until dissolved.
Add 1/2 cup berries and remaining ingredients; process until smooth.
Fold in remaining berries.
Divide evenly into 2 dessert glasses.
Chill.
