Ingredients

 
Pork tenderloin - 1
 
Garlic - 1 clove
 
White vinegar - 1/3 cup
 
Chicken stock - 1 cup
 
Black cherry preserves - 1/2 cup
 
Salt - to taste
 
Cracked black pepper - a generous amount
 
Butter - 2 tablespoons

Directions

GETTING READY
1) Remove the silver skin from the tenderloin with a sharp knife.
2) Sprinkle the salt and cracked black pepper all over the tendrloin. Ensure that the meat is completely coated with the seasoning.
3) Preheated oven to temperature of 350 degrees.

MAKING
4) Brown the pork in a hot pan placed over high heat for about 5 minutes on each side.
5) Roast the browned meat in the preheated oven for 20 minutes. Remove the pork from the oven and set it aside.
6) Place the previously used pan over low heat and add the garlic, vinegar, cherry jam and chicken stock. Mix well.
7) Cook the sauce till it has reduced by about 1/2 and is thick.
8) Turn off the heat and add the butter. Whisk well.

FINALIZING
9) Slice the pork carefully.
10) Put the black cherry sauce on a serving plate and top with the pork slices.

SERVING
11) Serve the preparation right away, while it is still hot and fresh.
