Black Forest Express Recipe
Ingredients
2 eggs
250 mL 1 cup skimmed milk
25 mL 2 tbsp corn syrup
1 mL 1/4 tsp nutmeg
8 100% whole wheat bread, remove the crust
10 mL 2 tsp margarine
300 g 10 1/2 oz black cherries, drained, set aside the juice
50 mL 1/4 cup sugar
25 mL 2 tbsp cornstarch, dissolved in cold water
60 g 2 oz semi-sweet chocolate shavings
Directions
Combine the eggs, milk, corn syrup and the nutmeg in a deep dish.
Beat well.
Dip the bread in the egg mixture.
Melt the butter in a non-stick pan and cook the bread slices on each side; set aside but keep warm.
Pour the black cherry juice and the sugar into a small pot.
Bring to a boil.
Thicken with the cornstarch.
Add the cherries; remove from heat.
Place a slice of cooked bread on a plate, covering it with the black cherry mixture.
Cover with a second slice of bread and sprinkle with chocolate shavings.
