Black-Eyed Pea Special Recipe
Ingredients
3 slices bacon
2 stalks celery, sliced
1 small onion, chopped
2 tablespoons chopped green pepper
1 (16-ounce) can tomatoes, undrained
1 1/2 cups water
2 (10-ounce) packages frozen black-eyed peas
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 small bay leaf
Directions
Fry bacon in a Dutch oven until crisp.
Remove bacon, reserving drippings in pan.
Crumble bacon, and set aside.
Saute celery, onion, and green pepper in pan drippings for 5 minutes.
Add remaining ingredients, and bring mixture to a boil.
Cover, reduce heat, and simmer 1 hour and 10 minutes or until peas are tender.
Remove bay leaf, stir in crumbled bacon before serving.
