Black Beans And Corn Recipe
Ingredients
| 1/4 cup water, nonfat chicken broth, or vegetable broth | ||
| Onion | 1/2 Cup (16 tbs), chopped | |
| Garlic | 1 Clove (5gm), chopped | |
| Green bell pepper | 1/2 Cup (16 tbs), chopped | |
| 2 cups home-cooked or canned black beans, drained and rinsed | ||
| Cooked | 1/2 Cup (16 tbs), frozen | |
| Ground cumin | 1/2 Teaspoon | |
| Ground coriander | 1/2 Teaspoon | |
Directions
Heat water or broth in a skillet over medium heat.
Add onion, garlic,and green bell pepper.
Cook and stir over medium heat for 5 minutes.
Add water during this process if necessary.
Add black beans, corn, cumin, and coriander.
Cook for 5 minutes or until beans and corn are warmed through.
Variation â– Let beans and corn cool to room temperature and toss with a dressing of 2 tablespoons apple cider vinegar, 1 tablespoon sugar, and 1 tablespoon water.
