Ingredients

 Black beans1⁄2 Pound, soaked
 Rosemary  (for garnishing)
 Water4 Cup (64 tbs)
 Salt1 Tablespoon
 Onion1⁄2 Cup (8 tbs), chopped
 Green pepper1⁄2 Cup (8 tbs), chopped
 Celery1⁄2 Cup (8 tbs), chopped
 Carrots1⁄2 Cup (8 tbs), chopped
 Olive oil4 Tablespoon
 Garlic3 Clove (15 gm)
 Cumin1⁄2 Tablespoon
 White vinegar2 Teaspoon
 Soy sauce1⁄2 Teaspoon

Directions

Step 1-Simmer beans in water till soft.

Step 2-Saute onions, pepper, celery & carrots in olive oil til the onions turn golden brown.

Step3-Add garlic, cumin, vinegar & soy sauce.

Step4-Cook, stirring for 5 minutes.

Step5-Drain about 1/2 c water from beans and add it to the saute.

Step6-Cook over a low heat for 30 minutes.

Step7-Combine vegetables with beans.

Step8-Cook for another 30 minutes, adding more water if necessary.
