2 cups home-cooked or canned black beans, drained and rinsed
 
1 tablespoon chili powder
 
1/2 teaspoon ground cumin
 
4 whole-grain
 
French rolls, split in half
 
Romaine lettuce leaves
 
1 medium tomato, thinly sliced
 
1 red bell pepper, seeded and thinly sliced in rings
 
1 onion, thinly sliced

Directions

1.
Place the beans, chili powder, and cumin in a food processor or blender and puree.
2.
Spread the bean puree on 4 of the roll halves.
3.
Top with the romaine lettuce, red pepper rings, tomato and onion slices, and remaining roll halves.
