Black Bean And Sausage Soup Recipe
Ingredients
1 pound dried black beans
3 tablespoons butter
2 carrots, scraped and thickly sliced
1 large onion, coarsely chopped
7 cups chicken broth
2 tablespoons Worcestershire sauce
1 bay leaf
1/2 pound knackwurst, frankfurters or other smoked sausages
2 teaspoons salt
1/4 teaspoon pepper Lemon slices
Directions
Soak beans overnight and drain.
Melt butter in a large saucepan or soup pot and saute carrots and onion until lightly browned.
Add beans, broth, Worcestershire and bay leaf.
Simmer, covered, about 2 1/2 hours or until beans are tender.
Thirty minutes before soup is done, add sausages, cut into small chunks, and salt and pepper.
To serve, discard bay leaf and garnish with lemon slices.
