Green-N-Bean Burrito Recipe Video

A simple to make Black Bean and Green Burrito recipe. You may or may not have noticed this about me, but I tend to repeat myself. If I really like something or something specific really makes me happy, I tend to express my feelings over and over and over. Anyhow, my point is...I love Mexican food!! Love it, love it, love it! Would eat it everyday if I could!! The only itsy, bitsy, problem that I have with Mexican is that it is the one cuisine that I have absolutely no self control around. Take me to a Mexican restaurant and I'm the first one dipping into the chips and salsa as I wash it all down my beloved margarita! Oh man, do I love margaritas! And that's just the beginning...chicken tacos, chicken quesadillas, crab enchiladas, and guacamole are all on my list of favorites when I'm going Mexican! This brings me to why I am so in love this burrito. I can make it at home whenever I want AND it is packed with "good for me" ingredients...black beans, onions, peppers, swiss chard, and whole grain tortillas, so I get to enjoy some of my favorite flavors without the guilt:)!

Ingredients

 
Extra virgin olive oil - 2 tablespoon
 
Onion - 1, chopped
 
Red bell pepper – 1, chopped
 
Garlic – 3 cloves, chopped
 
Jalapeno – ½, chopped
 
Cumin powder - 1 teaspoon
 
Cayenne pepper – a pinch
 
Red swiss chard – 1 bunch, stems removed and cut into bite size pieces
 
Black beans – 2 cans, rinsed and drained
 
Light sour cream – 1/3 cup
 
Light mozzarella cheese - 1/2 cup
 
Cabbage – ¼, thinly sliced
 
Cilantro – 2 tablespoon, chopped
 
Salt and pepper – to taste
 
Whole wheat tortillas - 4

Directions

MAKING
1. In a pan, heat extra virgin oil.
2. Add onions, jalapeno, garlic and red bell pepper. Stir and let it cook for 3-5 minutes till onions are translucent and vegetables are nice and tender.
3. Add cumin powder, cayenne pepper and Swiss chard. Stir it.
4. Add black beans. Stir well and let it cook.
5. Heat a skillet to prepare the tortillas.
6. Place the tortilla on the skillet and let it heat for a minute on each side.
7. The beans would have heated by now. Add a pinch of salt and freshly ground pepper.
8. Add sour cream and cilantro. Stir well.
9. Place one tortilla on a plate.
10. Add shredded cabbage, a spoonful of beans and mozzarella cheese. Wrap it up.

SERVING
11. To serve Green-N-Bean Burrito, top it with big spoon of Glucamole, cut tomatoes and a couple of slices of lime.
