Black Walnut Cookies Recipe
Ingredients
3 eggs
1 1/2 teaspoons water
1 pound brown sugar
3 cups sifted all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup black walnuts, chopped
Directions
Beat the eggs with the water until thick and lemon-colored, using an electric mixer set at medium speed.
Gradually add the sugar (any soft lumps will blend in) and continue to beat until very thick, about 15 minutes longer.
Sift the flour with the salt and baking soda.
Mix in the walnuts.
Fold into the egg mixture one quarter at a time; blend just until well combined.
Form into balls the size of hickory nuts (about 3/4 inch) with lightly greased hands.
Place at least an inch apart on an ungreased cookie sheet.
Bake in a 350° oven for 10 to 12 minutes.(They will puff up during baking, then crackle on top when done.)
