Ingredients
1 env. unflavored gelatin
1/4 cup cold water
3 egg yolks
2 tsp granulated sugar replacement or granulated fructose
1/4 tsp. salt
3/4 cup skim milk
1 tsp vanilla extract
1/2 cup black walnuts (chopped fine)
1 cup low-calorie whipped topping (prepared)
Directions
Combine gelatin and cold water in small cup; set aside 10 minutes to soften.
Beat egg yolks, sugar replacement and salt in top of double boiler, and place top of double boiler over hot (not boiling) water.
Stir in milk and cook over simmering water until mixture thickens; remove from heat.
Stir in softened gelatin until completely dissolved, and add vanilla and black walnuts.
Remove top of double boiler from heat and let cool completely.
Fold in topping, spoon into serving dishes or mold, and chill thoroughly.
