Black Eyes Of Texas Casserole Recipe
Ingredients
| Ground meat | 2 Pound | |
| Yellow onion | 1 Large, chopped | |
| Jalapeno | 1 Can (10oz) | |
| Cream of chicken soup | 1 Can (10oz) | |
| Cream and mushroom soup | 1 Can (10oz) | |
| Hot Sauce | 1 Can (10oz) | |
| 1 tsp. garlic powder or 2 to 3 minced cloves | ||
| Tortilla chips | 1 Bag (1kg), divided | |
| Cheddar Cheese | 3 Cup (16 tbs), divided | |
Directions
In a large skillet over medium heat, brown ground beef.
Add onion, black-eyed peas, undiluted soups, enchilada sauce and garlic; stir.
Grease 2 casseroles; layer 1/4 of chips on bottom of each casserole.
Top with 1/4 of meat mixture and 1/4 of cheese.
Repeat layering procedure.
Bake in preheated 350° oven 35 minutes.
