Ingredients

 1 cup black-eyed peas
 Water2 Cup (16 tbs)
 Coriander1/4 Teaspoon
 Nutmeg1/4 Teaspoon
 2 tsp honey or brown sugar
 Dry mustard1 Teaspoon
 Tomato sauce3 Teaspoon
 Molasses2 Teaspoon
 Salt1/2 Teaspoon

Directions

Presoak peas 6-8 hours.
Drain.
Place peas in a large pan, add water, cover, and cook until nearly done and water is nearly absorbed, about 1-1 1/2 hours.
Combine remaining ingredients and mix well.
Add to the peas and simmer until sauce is almost absorbed.
Peas should still be very moist.
Serve as a vegetable, or with Brown Rice with Cheese Sauce as a main dish.
