 1/2 pound black-eyed peas, soaked for 4 hours and drained
 Celery stalks2
 1 yellow onion, peeled and chopped
 Red pepper flakes1 Teaspoon, crushed
 Ham1/2 pound, smoked
 Salt To Taste
 Pepper To Taste

Directions

Place all the ingredients in a pot, and do not quite cover with water.
Simmer, covered, for about 30 minutes, or until tender
