Fresh Black Eyed Pea Salad Recipe
Ingredients
| 1 can black-eyed peas | ||
| Tomatoes | 2 Large, chopped | |
| 4 small, Thai red peppers | ||
| Onion | 1/2 , finely chopped | |
| Handful of torn, fresh spinach leaves | ||
| Chopped | 1 Cup (16 tbs) | |
| Juice of 1/2 lemon | ||
| Juice of 1/2 orange | ||
| 1 clove garlic, chopped fine | ||
| Yoghurt | 1/2 Cup (16 tbs) | |
| Ground cumin | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Teaspoon | |
| Olive oil | 3 Tablespoon | |
Directions
GETTING READY
1) In a small bowl, to combine lemon and orange juice, cumin, oil, salt and pepper. Keep it aside.
MAKING
2) In a large bowl, place peas, onion, garlic, parsley, hot peppers and tomatoes. Combine all together.
3) Pour the dressing over the salad and toss well.
4) Add spinach leaves, coriander or parsley to the salad.
5) Pour in yoghurt and give a final toss.
SERVING
6) Garnish with mandarin orange segment before serving.
