Ingredients

 
1 package dry black eyed peas
 
1/3 cup cider vinegar
 
2 tablespoons olive oil
 
1 tablespoon cayenne pepper sauce
 
2 teaspoons sugar
 
1 1/2 teaspoons salt
 
2 medium celery stalks, diced
 
1 medium red onion, diced
 
1 package frozen peas, thawed

Directions

Rinse black eyed peas with cold running water and discard any stones or shriveled peas.
In 8 quart Dutch oven, heat black eyed peas and 12 cups water to boiling over high heat.
Reduce heat to low; cover and simmer 25 to 30 minutes, until peas are just tender.
Meanwhile, prepare dressing: In large bowl, with wire whisk or fork, mix vinegar, olive oil, pepper sauce, sugar, and salt until blended.
Drain black eyed peas and rinse well.
Gently toss warm black eyed peas with dressing in bowl.
Add celery, onion, and thawed peas.
