1 1-oz pkg (330 g) Black-eyed Peas, cooked and drained
1/3 cup (80 ml) rehydrated Dried Tomatoes, chopped
1/3 cup (80 ml) red or green bell pepper, chopped
1/4 cup (60 ml) red onion, minced
1 clove Elephant Garlic, peeled and chopped
2 tbs (30 ml) fresh Cilantro Leaves, minced
1 Dried Habanero Chile, reconstituted, seeded and finely chopped fresh cilantro, chopped tomato or red onion, garnish
Directions
In blender container or food processor bowl, place all ingredients.
Cover and process until smooth.
Garnish as desired.
