Black Bottom Pie With Chocolate Crust Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Sugar | 3/4 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Milk | 1 1/2 Cup (16 tbs) | |
| Eggs | 4 , separated | |
| Cornstarch | 1 Tablespoon | |
| Rum | 2 Tablespoon | |
| Unsweetened chocolate square | 1 1/2 | |
| Crumb Crust made with chocolate-cookie crumbs, baked | ||
| Whipped cream | ||
| Shaved semisweet chocolate | ||
Directions
Mix gelatin, 1/4 cup sugar, and the salt in top of small double boiler, Add milk, egg yolks and cornstarch; beat to blend.
Put over simmering water and cook, stirring constantly, until mixture thickens and coats a metal spoon.
Remove from heat and add rum.
Measure out 1/2 cup of the mixture and blend in chocolate.
Spread in bottom of cold Crumb Crust.
Chill remaining mixture until thickened but not firm.
Beat egg whites until foamy; gradually add remaining sugar, beating until stiff but not dry.
Fold into gelatin mixture.
Pile lightly on chocolate mixture.
Chill until firm.
Top with whipped cream and shaved chocolate.
