Black Beans In Rum Recipe

Ingredients
1 pound dried black beans
Water
1 large onion, chopped
2 cloves garlic, minced
3 stalks celery, diced
1 minced carrot
Small herb bouquet (bay leaf, thyme and parsley, tied in cheesecloth)
Salt and freshly ground black pepper
3 tablespoons butter
2 jiggers (6 tablespoons) dark rum
Sour cream
Directions
1. Soak the beans overnight in water to cover; or boil two minutes and soak one hour or longer. Drain and add six cups of water.
2. Add vegetables and seasonings and simmer slowly until the beans are almost tender. Discard the herb bouquet.
3. Preheat oven to moderate (350° F.).
4. Place the beans and their juice in a bean pot or casserole, add the butter and one jigger of the rum. Cover and bake until the beans are tender, about two hours. Add another jigger of rum and serve piping hot with cold sour cream.
