Ingredients

 
Whole wheat penne pasta - 1 small box
 
Orange pepper - 1, sliced
 
Red pepper - 1, sliced
 
Yellow pepper - 1, sliced
 
Onion - 1, diced
 
Garlic cloves - 2, minced
 
Small shelled and deveined shrimp - 10 to 12
 
Olive oil - 2 tablespoons
 
Butter substitute - 1 tablespoon
 
Large ripe tomatoes - 2, chopped
 
Large basil leaves - 3, rolled up and sliced
 
Grated Parmesan cheese
 
Black pepper - to taste
 
Salt - to taste

Directions

MAKING
1) Place 2 quarts of water on stove for boiling pasta.
2) In a large skillet peppers on medium heat for 4 minutes.
3) Meanwhile cook the penne according to the packages instructions.
4) Add onions and garlic to the peppers and sauté for 3 more minutes.
5) Add a pinch of salt.
6) Add shrimp and cook for 2 minutes.
7) Add tomatoes and cook for another 2 minutes or until the shrimp are opaque.
8) Drain cooked pasta and run under cold water to stop cooking.
9) Add butter and chopped basil to the sauce.
10) Add salt and pepper to taste
11) Put the pasta in a nice low bowl and pour sauce over top.

SERVING
12) Grate cheese over it and serve immediately.
