Black Bean Salad Recipe
Ingredients
| 1 cup Spicy Black Beans with liquid, drained | ||
| Zucchini | 1/3 Cup (16 tbs), chopped | |
| 1/4 cup drained canned whole-kernel corn | ||
| Red bell pepper | 2 Tablespoon, chopped | |
| 1 tablespoon chopped green onions | ||
| Cilantro | 1 Tablespoon, minced | |
| White balsamic vinegar | 2 Tablespoon | |
| 1 teaspoon seeded minced jalapeno pepper | ||
| Garlic | 1 Teaspoon, minced | |
| Olive oil | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 2 curly leaf lettuce leaves | ||
Directions
MAKING
1. In a bowl, combine zucchini, black beans, corn, bell pepper, green onions, garlic, oilve oil, cilantro, vinegar, salt and pepper and jalapeno and toss it all well
2. Cover the bowl and chill for a couple of hours
SERVING
3. Line the plate with lettuce, spread the salad and serve
