Ingredients
1/2 cup chopped onion
1 clove garlic, minced
2 teaspoons vegetable oil
1 1/2 cups water
1 can (about 14 ounces) beef broth
1 can (15 ounces) black beans or pinto beans, rinsed and drained
1 can (14 1/2 ounces) no salt added stewed tomatoes
3/4 cup uncooked UNCLE BEN'S® Brand Rice In An Instant
1/3 cup medium picante sauce or salsa
1 teaspoon ground cumin
1/4 teaspoon dried oregano leaves, crushed
2 tablespoons chopped fresh cilantro (optional)
Directions
Cook and stir onion and garlic in hot oil in large saucepan or Dutch oven until onion is tender.
Add water, broth, beans, tomatoes with juice, rice, picante sauce, cumin and oregano; bring to a boil.
Cover; reduce heat to low and simmer until rice is tender, about 5 minutes.
Sprinkle with cilantro
