Black Bean Quesadilla Sandwiches Recipe
Ingredients
| Black beans | 1 Can (10oz), drained, rinsed | |
| Green chiles | 1 Can (10oz), chopped | |
| Tomato | 2 Tablespoon, chopped | |
| Cilantro | 1 Tablespoon, chopped | |
| Whole wheat tortillas | 8 | |
| Crumbled goat cheese | 4 Ounce | |
| 1 tablespoon plus 1 teaspoon chopped tomato | ||
| Cilantro | 2 Teaspoon, chopped | |
Directions
Combine beans, green chiles, 2 tablespoons tomato, and 1 tablespoon cilantro; stir well.
Spread bean mixture evenly onto 4 tortillas.
Top each evenly with goat cheese.
Top with remaining tortillas.
Place sandwiches on an ungreased baking sheet.
Bake at 50° for 12 minutes or until cheese softens.
Top each sandwich with 1 teaspoon chopped tomato and 1/2 teaspoon lantro.
