Ingredients

 Cooked black beans2 Can (10oz)
 Salt pork1/2 pound, sliced
 Ham bone1 Small
 Water1 Quart
 Onion1 , minced
 1/2 clove garlic, chopped fine
 Carrot1/2 , diced
 Fat5 Tablespoon
 Bay leaf1 , crushed
 Pinch thyme
 Nutmeg1/4 Teaspoon
 1 teaspoon hashish, grated (optional)
 Brown sugar2 Tablespoon, warmed
 Pot1 Teaspoon, crushed
 Rum1/2 Cup (16 tbs)
 Salt To Taste
 Pepper To Taste

Directions

Place beans in heavy iron pot with salt pork, ham bone and water.
Boil slowly.
Meanwhile, saute onion, garlic and carrot in fat in a separate skillet.
Add to pot.
Add bay leaf, thyme, nutmeg and hash.
Cover and cook slowly 3 hours.
Add sugar, pot, and rum.
Season to taste.
Mix well and serve.
