Ingredients

 Cooked black beans- 4 cups (or 2-16 ounce cans, rinsed and drained)
 Red bell peppers2 To taste
 Yellow bell pepper1 To taste
 Green bell peppers2 To taste
 Scallions1 Bunch (100gm), sliced
 Jalapeno peppers2 To taste
 Coriander1/2 Teaspoon
 Com oil- 2 tablespoons
 Lime juice2 Tablespoon
 Salt1/2 Teaspoon
 Black pepper1/4 Teaspoon
 Pinch cayenne

Directions

MAKING
1. In a bowl place the black beans.
2. Combine jalapeno pepper, lime juice, salt and pepper, sweet bell pepper and scallions.
3. Toss till the beans are coated well.

SERVING
4. Serve black bean jalapeno salad with additional cayenne.
