Remove bitterness from bittergourds after peeling and cutting them into thin rounds.
For removing their bitterness sprinkle them with salt liberally and set aside whole night.
Next morning, wash them in plenty of water.
Slice onions finely.
Grind to a paste chillies, ginger, garlic and cumin seeds.
Heat 1 tblsp ghee and 2 tblsps coconut oil and fry the onions till almond coloured.
Put in the ground paste, turmeric and salt and fry till a nice smell comes out of it.
Add prawns and cook till dry.
Then put in the bittergourds and enough water to cover the prawns and gourds and cook till almost done.
Mix in jaggery and tamrind water and cook till done and the mixture turns quite thick.
Serve hot garnished with coriander leaves.
