 Bitter gourd, small size, 500 gms
 Onion1 , grated
 Chilli powder1 1/2 Teaspoon
 Gram flour2 Tablespoon
 Turmeric powder3/4 Teaspoon
 Garam masala1/2 Teaspoon
 Salt and sugar to taste
 Garlic8 Clove (5gm), crushed
 Ginger, finely grated, 1 small piece
 Tamarind juice1 Tablespoon
 Jaggery to taste
 Mustard seed1/2 Teaspoon
 Asafoetida1 Pinch
 Oil, 3 to 4 tablespoons
 Salt To Taste

Directions

Scrape the bitter gourds.
Slit from the side.
Boil them in salted boiling water for 7 to 10 minutes.
Drain.
Press slightly to remove excess water.
Combine onion, garlic, ginger and powdered masalas.
Add one tablespoon oil.
Stuff the bitter gourds with this stuffing.
Heat oil in a pan and fry mustard seeds and asafoetida.
When the seeds stop popping add stuffed bitter gourds.
Stir for two minutes on medium fire.
Add tamarind juice, jaggery and 1/4 cup water.
Continue cooking for a minute more.
Remove from heat.
