|Water chestnuts||1⁄2 Cup (8 tbs), finely chopped|
|Green bell pepper||1⁄4 Cup (4 tbs), finely chopped|
|Onion||1⁄4 Cup (4 tbs), finely chopped|

In a large bowl combine spinach, Egg Beaters, water chestnuts, green pepper, onion, salt and pepper; mix well.
Preheat nonstick griddle according to manufacturer's instructions.
Drop egg mixture by teaspoonfuls onto hot griddle.
Cook over medium-high heat until brown on both sides.
On a baking sheet place foo yung bites in single layer; cover.
Chill until 30 minutes before serving time.
Preheat oven to 300 degrees.
Bake foo yung bites for 20 to 30 minutes or until very hot.
Serve with sweet and sour sauce.
